The Chows Kitchen – Quick and Easy Menu Planning #3
/Welcome to the Chows Kitchen! As a person who would rather hold a paint brush than a ladle, I try to plan healthy(ish) and easy meals to get us through the week. Menu Planning has been the biggest lifesaver for our family. Not only does it make the cooking process less dreadful, but it saves us $$$ and keeps us eating healthier.
Depending on the recipe, I will adapt to fit dietary needs. It took me time to realize I don't have to follow the recipe exactly. If I make any changes, I will let you know. Here is what we are having this week!
Sunday
Breakfast for dinner!
We are keeping it simple tonight and doing scrambled eggs, hash browns and sausage patties.
Monday
Creamy Tuscan Salmon (Eat Well)
We've made this so many times and it is delicious! I found a dairy free heavy whipping cream at sprouts so I substitute that. We will serve it over bowtie pasta.
Tuesday
Black Bean Spinach Enchiladas (The Garden Grazer)
These are sooooo good! I will add in ground turkey or shredded chicken, but they really don't need it. They also freeze well in case you don't want to have the leftovers right away.
We don't serve it with anything because they are pretty filling (I make extra and stuff them to their core). But if I did, I would do some Spanish rice.
Wednesday
Honey Garlic Butter Scallops (The Recipe Critic)
I love scallops and I love honey garlic. Quick and simple! We will serve it over rice with broccoli.
Thursday
Leftovers! My favorite kind of night :) We just hodgepodge whatever leftovers we have from the week.
Friday
Fridays are our eat out days.
It is also our dessert day. After endless asking from Berkley if we could have dessert on any given night, we decided to make Fridays that night and now she never asks :)
Saturday
Homemade Salad with Chicken
My biggest craving this pregnancy has been salads. This has been my go to: spinach, crispy chicken strips, feta cheese, cranberries, candied pecans, hardboiled egg and shredded carrots with a balsamic vinaigrette dressing
