Quick and Easy Menu Planning – The Chows Kitchen #7

Welcome to the Chows Kitchen! Weekly Menu Planning has been the biggest lifesaver for our family. As a person who would rather hold a paint brush than a ladle, I try to plan healthy(ish) and easy meals to get us through the week. Not only does it make the cooking process less dreadful, but it saves us $$$ and keeps us eating healthier. Plus, it is so easy to change it throughout the week.

Depending on the recipe, I will adapt to fit dietary needs. It took me time to realize I don't have to follow the recipe exactly. If I make any changes, I will let you know. Here is what we are having this week!

Sunday Menu

Birthday Celebration!

Today is my husbands 35th birthday, so we will be celebrating him with dinner of his choosing! He is the most supportive person when it comes to everything, especially food. Since I am unable to eat red meat or pork, he rarely has it. We are doing takeout of his choosing, because me attempting to cook a steak with a 2 week old ain't happening :P

Roasted Brussel Sprouts and Sweet Potatoes with Chicken (The Food Charlatan)

I love this combo, but don't make it often because the girls aren't a fan. I could just eat this by itself, but I'll pair it with some baked chicken for extra heartiness.

Bruschetta Chicken Casserole (Clean Food Crush)

We've made this before and it is quite tasty! Grab a baguette and cut into pieces or just eat it plain.

Wednesday Menu

Orange Chicken, Rice and Edamame

Wednesday's are our busy evenings. Berkley has tennis lessons and by the time we get home, we are scrambling until bedtime. Whenever we need something quick and easy, I turn to Trader Joe's orange chicken (no other place compares). Serve it over their microwavable brown rice and top it off with edamame...quick and easy meal.

Orecchiette with Artichokes (Food Network)

Yumm! I am excited for this one. Lots of flavor without losing the health factor. Plus easy to make! I plan on adding some chicken as well for some added protein.

Leftovers! My favorite kind of night :)

It is also our dessert day. After endless asking from Berkley if we could have dessert on any given night, we decided to make Fridays that night. Now she never asks :)

Birthday Celebration!

It is Sawyer's 3rd birthday so we are going to be celebrating her with dinner of her choice...most likely something that contains fruit ;) She is our fruit eating, smoothie loving, carb conscious child :D
