The Chows Kitchen – Quick and Easy Menu Planning #4
Welcome to the Chows Kitchen! As a person who would rather hold a paint brush than a ladle, I try to plan healthy(ish) and easy meals to get us through the week. Menu Planning has been the biggest lifesaver for our family. Not only does it make the cooking process less dreadful, but it saves us $$$ and keeps us eating healthier. Plus, it is so easy to change it throughout the week.
Depending on the recipe, I will adapt to fit dietary needs. It took me time to realize I don't have to follow the recipe exactly. If I make any changes, I will let you know. Here is what we are having this week!
Sunday
Instant Pot Lemon Garlic Parmesan Shrimp Pasta (365 Days of Crockpot)
I am a big fan of the Instant Pot and this one is perfect for the whole family. Perfect for a busy Sunday after working on the bunkbeds.
Monday
Chicken Tamales, Chicken Taquitos, Beans & Rice
Sometimes you just need a quick and easy meal...and this is one of those times 😜
Tuesday
Chicken Thighs, Scalloped Potatoes & Asparagus
Also another day of a simple meal :) It's the week before Thanksgiving and our schedule is a little hectic. Trader Joes has some frozen scalloped potatoes that we are trying out. We have found the perfect way to cook chicken using both the stove and oven...and a meat thermometer (a greatest investment).
Wednesday
Mississippi Chicken (Alyonas Cooking)
This will be our first time trying this out so we will see how it goes!
Thursday
Parmesan Spinach Mushroom Pasta Skillet (Eat Well 101)
Another one pot meal! We always add chicken sausage for some protein {Trader Joes ones are my favorite}. I also don't do as much red pepper flakes because we want the girls to eat it too.
Friday
Fridays are our eat out days.
It is also our dessert day. After endless asking from Berkley if we could have dessert on any given night, we decided to make Fridays that night and now she never asks :)
Saturday
Homemade Salad with Chicken
My biggest craving this pregnancy has been salads. This has been my go to: spinach, crispy chicken strips, feta cheese, cranberries, candied pecans, hardboiled egg and shredded carrots with a balsamic vinaigrette dressing
