Quick and Easy Menu Planning – The Chows Kitchen #9
Welcome to the Chows Kitchen! A weekly Menu Plan has been the biggest lifesaver for our family. As a person who would rather hold a paint brush than a ladle, I try to plan healthy(ish) and easy meals to get us through the week. Not only does menu planning make the cooking process less dreadful, but it saves us $$$ and keeps us eating healthier. These past two weeks are a prime example of why I love to meal plan. I didn't meal plan and we ended up either eating out or having something quick at home.
Depending on the recipe, I will adapt to fit my dietary needs {I have Crohn's disease and stay away from red meat, pork, dairy, etc.}. Here is what we are having this week!
Sunday Menu
Dinner out
We were late in the meal planning and getting groceries this week, so eating out it was.
Monday Menu
Sheet Pan Arctic Char Niçoise Salad (Food Network)
I am excited to try this one! I hope it tastes as good as it looks.
Tuesday Menu
Lemon Spaghetti (Food Network)
A fun twist on a simple meal. I'll pan fry some Tilapia fillets and asparagus to go with it.
Wednesday Menu
Shrimp Scampi Risotto (Food Network)
Risotto and Shrimp...enough said. Served with an arugula salad and it's perfection.
Thursday Menu
Leftovers
Wednesdays and Thursday nights are our busy nights. I always make more of our dinners every night so we can have leftovers for nights like these.

Gemelli with Pesto, Potatoes and Green Beans (Food Network)

Saturday Menu
Creamy Spinach Mushroom Tortellini with Caramelized Onions (Julia's Album)
We've made this before and it is very tasty. I'll substitute the non-dairy heavy whip. I suggest caramelizing the onions ahead of time, it makes the dinner prep less chaotic. This also makes great leftovers.
